Yannick Alléno, who helms the STAY in One&Only The Palm Dubai, has been honoured as the Chef of the Year 2015 by leading French restaurant guide Gault&Millau.

 

Yannick Alléno, aux commandes du STAY au One&Only The Palm de Dubai, vient d’être sacré Chef de l’année 2015 par le prestigieux Guide Gault&Millau.

 

Alléno has featured regularly in this prestigious guide where he first appeared in 2003 and steadily climbed the ranks to achieve the highest rating: five “toques” in 2010. In 2007 – the same year he received his third Michelin star – Gault&Millau awarded the chef 18/20, among the guide’s highest possible scores.

 

Alléno a figuré régulièrement dans le fameux Guide. Il y est apparu pour la première fois en 2003 et n’a cessé de progresser dans le classement pour parvenir au sommet avec cinq «toques» en 2010. En 2007, l’année où il reçoit ses Trois Étoiles au Michelin, Gault&Millau lui donne un 18/20. Difficile de faire mieux.

 

 “We could have rewarded Alléno seven or eight years ago, but 2015 is undeniably his year. His thought process on French cuisine and its fundamentals, the sauces and his work on extractions mark a turning point, not only in his career but in today’s vision of fine dining” explains Côme de Chérisey, executive editor of Gault&Millau.

 

«Nous aurions pu récompenser le technicien virtuose il y a sept ou huit ans. Mais le grand moment Alléno, c’est maintenant. Sa réflexion sur la cuisine française et ses fondamentaux, les sauces, son travail sur les extractions, totalement abouti au point de proposer de véritables essences rares (...) marque un tournant, non seulement dans sa propre carrière, mais dans la vision du haut niveau actuel.» explique Côme de Chérisey, directeur général de la rédaction du Gault&Millau 2015.

 

Yannick Alléno is the culinary director of Alléno Paris at the Pavillon Ledoyen in Champs-Elysées, for which he received the honour. He is also Chef at the 1947 in Cheval Blanc, Courchevel, and helms restaurants like La Grande Table at the Royal Mansour in Marrakech, the STAY at the One&Only The Palm in Dubai and Shangri-La Beijing...

 

En juillet 2014, il s'est installé au Pavillon Ledoyen dont il veut faire «la plus belle maison parisienne à offrir au monde entier» mais le lauréat est aussi aux commandes de plusieurs restaurants renommés dont le 1947 de la Maison Cheval Blanc à Courchevel, deux brasseries à l'enseigne des «Terroirs parisiens» à Paris, la Grande Table au Royal Mansour de Marrakech, le STAY du One&Only The Palm à Dubaï et à Beijing…

 

“Being named Chef of the Year was a real surprise,” notes Alléno. “What made me even happier was that they understood that my recent arrival at Pavillon Ledoyen marked a new stage in my life as a chef. Gault&Millau reviewers are excellent observers and the fact that they named me Chef of the Year means that along with my staff, we are on the right track, and that work and research carried out these last few years is bearing fruit.”

 

«Être désigné par Gault&Millau comme cuisinier de l’année a été une réelle surprise, je ne m’y attendais pas.» A commenté Alléno. «Cela m’a fait d’autant plus plaisir que Gault & Millau a vite compris que mon arrivée chez Ledoyen marquait une nouvelle étape dans ma vie de cuisinier. Les enquêteurs Gault&Millau sont d’excellents observateurs et le fait qu’ils me consacrent «Cuisinier de l’année» signifie qu’avec mon équipe nous sommes sur la bonne voie et que le travail gustatif et de recherche effectué ces dernières années porte ses fruits. Je reçois cette distinction comme un encouragement.»
